Grilled Flank Steak and Veggies with Green Peppercorn Sauce

Ingredients

-1 to 1 1/2 lb flank steak

-1 cup low sodium soy sauce

-1/4 cup lemon juice

-1/4 cup honey

-1 tbsp minced garlic

-3 cups seasonal vegetables of choice, chopped (bell pepper, sweet potatoes, green beans, onions, summer squash)

-1-2 tbps olive oil

-1/2 tsp seasoned salt and pepper

-1/4 tsp each of garlic powder, onion, powder, smoked paprika, & chili powder

-1 pkg Le Sauce & Co. Classic Green Peppercorn Sauce

-Optional brown rice for serving

Preparation

  1. In a small bowl whisk together soy sauce, lemon juice, honey, and minced garlic.


  2. Pour over flank steak (in a large bag or dish) to marinate for 3-6 hours. Turn to coat all sides.

  3. Preheat grill to 400-425 degrees.

  4. Add chopped veggies to a large bowl.

  5. Drizzle with olive oil and seasonings, stir to coat.

  6. Use a grill pan to grill for about 20 minutes, stirring occasionally. If no grill pan, divide veggies between two sheets of foil, wrap each packet tightly and grill foil packets for 20 minutes, turning half way.

  7. Place steak onto preheated grill. Grill on each side for about 6-8 minutes or until temperature reaches 140 degrees for medium doneness. Use a meat thermometer to reach desired doneness.

  8. Add Le Sauce Green Peppercorn sauce to a small saucepan and heat over low hear for 2-3 minutes or until warm.

  9. Allow steak to rest for 5-10 minutes before slicing.

  10. Slice against the grain and serve over grilled veggies, and drizzle with Green Peppercorn Sauce.
